The cellar itself, resembling a wooden traditional farmhouse, dates back to 1835, which Ivan restored to preserve cultural heritage. Wine production relies on the natural quality of the grapes, without any corrections or interventions in the must or wine, while fermentations are carried out spontaneously with indigenous yeasts. This approach aims to faithfully convey the specific characteristics of the soil and vineyard location, as well as the characteristics of each harvest and grape variety, resulting in original, honest, and natural wines.<\/p>\n<h3><strong>WHERE?<\/strong><\/h3>\n<p>Located on the slopes of Moslava\u010dka Gora, in Popova\u010da, the family farm of Ivan Kosovec owns 3 hectares of vineyards with around 19,000 grapevines in one of the most beautiful vineyard locations in Moslavina. The grape varieties include \u0160krlet, Chardonnay, Frankovka, Zweigelt, and Pinot Noir. The philosophy of vineyard cultivation and processing is based on ecological principles and techniques, with minimal vineyard protection relying on dedicated manual work and reduced mechanization, without the use of artificial fertilizers, insecticides, or herbicides.<\/p>\n<h3><strong>WHY?<\/strong><\/h3>\n<p>Interestingly, Ivan Kosovec decided to keep the Zweigelt 2017 in the cellar for maturation, while the 2018 harvest was bottled. This decision was based on the assessment that the 2018 Zweigelt was fully ready with a fantastic balance achieved entirely in the vineyard. Here, the nobility is evident, with optimally ripe grapes from which the wine was produced through fermentation with ambient yeasts and in accordance with the winemaker&#8217;s non-interventionist approach. The aromatic spectrum is wide, ranging from red apple to powerful chokeberry, noticeable body, to the point that its drinkability surprises.
