The head of the family still oversees most of the production, with 4 hectares in Volnay, while Guillaume controls the rest from his new winery. Guillaume&#8217;s greatest contribution has been to enhance his wines with an additional dose of elegance, as well as adding an extra dimension of fruitiness and aromatic precision. He uses only 15-20% whole clusters in vinification to elevate the aromatics, and combined with lightly toasted barrels, he highlights the inherent fruitiness of the variety.<\/p>\n<h3><strong>WHERE?<\/strong><\/h3>\n<p>The vineyards are located in the commune of Pommard. The soil is a combination of clay and limestone, with a predominance of the Guyot training system. Yields are rigorously controlled throughout the year to ensure minimal intervention and naturally maximal concentration of aromatic compounds in the grapes. Pommard is characterized by attractive aromatics and silky tannins, impressive length on the mid-palate, and a measured dose of new oak.<\/p>\n<h3><strong>WHY?<\/strong><\/h3>\n<p>The Glantenay family produces wine exclusively from their own vineyards. In the winery, every action is carried out with maximum care and perfection. Consequently, the wines are meticulously calibrated, focused, and reflect the terroir in which they are grown.
