WHO?
The Jagunić family has dedicated their lives to producing premium wines across four generations. Every drop is infused with love, effort, and hard work to satisfy even the most discerning palates. This legacy has been passed down through generations, enriched by the invaluable experience of their grandfathers. Brothers Dominik and Martin, both agronomy graduates specializing in their respective fields, have introduced new technologies, following trends. Today, the winery focuses on producing sparkling, still white, and amber wines. This is precisely the segment where the potential of Plešivica shines, one of the most promising terroirs in the recent history of Croatian winemaking.
WHERE?
Plešivica has long been known as an almost perfect place for grape cultivation. It’s a combination of several factors: the slope of the terrain, their exposure to different sides of the world, soil type, wind exposure, climatic conditions, and human influence. The vineyard sites are carefully chosen based on the variety, rootstock, and the envisioned wine, and they are among the best that Plešivica offers on its widely renowned “amphitheaters.” The current eight grape varieties are grown in ten locations, all in close proximity to the winery to minimize the time between harvesting and processing. Harvesting is exclusively done by hand and with uncompromising selectivity to ensure excellent raw materials.
WHY?
Crafted using the classic or Champagne method (French: méthode champenoise), this sparkling wine combines the elegance of the variety with the richness imparted by a prolonged secondary fermentation and aging on lees (over 30 months). The base wine (100% Chardonnay, hence the name blanc de blancs, or “white wine from white grapes” in loose translation) is aged in old wooden barrels and specially prepared for this vintage sparkling wine. It offers a fantastic balance and precision on the palate, where acidity and minerality hold focus and provide sharpness without rough edges. Typical autolytic notes (breadcrumbs, brioche, toast) alternate with aromas of lemon creaminess and Granny Smith apples, lifted to the surface by the relentless effervescence of tiny bubbles.
