WHO?
Dalmatia, Šibenik. Wine has been made here for two thousand years, as evidenced by the testaments from ancient times. There are three such testaments. The first is a hypocaust from the 2nd century, a heated room that ancient Romans often used for ripening harvested grapes. The second consists of 102 ancient amphorae used for transporting wine and olive oil, found at the bottom of the Adriatic Sea near Šibenik. And the third is the Machina Nova, a grape press invented in the 16th century by the famous inventor Faust Vrančić, originally from the Šibenik area.
WHERE?
The vineyards are located in the wine-growing region of Northern Dalmatia, in the immediate vicinity of the medieval city of Šibenik. The specific weather conditions and the uniqueness of the soil here demand a constant struggle for survival from the grapevine, and this centuries-old ritual is felt and seen in the more intense, deeper, and fuller colors, flavors, and aromas of these wines.
WHY?
Babić, which comes from the Šibenik area, specifically from the position of Jadrtovac, known for high-quality grapes. It has a deep ruby color and pronounced fruitiness, dominated initially by sour cherry, followed by blueberries and raisins. With oak notes (aged for 6 months in a combination of American and French oak barrels), balsamic notes also emerge. With pronounced tannins, it is very expressive yet refined and harmonious.
